A brief story of the House of “Hakata”
In 2003, chef Tang-Qun tasted authentic Hakata-Tonkotsu Ramen for the first time in Fukuoka. He immediately fell in love with the rich but complicated flavour of Tonkotsu soup, which he had never tasted before. He couldn’t forget about the taste for years...
After leaving a head chef position at London’s leading Sushi restaurant, he went back to Fukuoka and Yokohama to be trained to prepare authentic Ramen with his Japanese wife from Fukuoka.
We are in Scotland, papering Ramen with care and love every day, just like our Japanese Ramen masters.
